St. Joseph's Care Group, in partnership with Sodexo welcomed Chef Michael Smith to St. Joseph's Hospital today (June 24, 2015).
Baking With Passion
In 1884, the Sisters of St. Joseph opened St. Joseph's Hospital (the first hospital in Port Arthur) to meet the healthcare needs of the community. Since then, St. Joseph's Care Group has responded to the unmet needs of the community by changing over time and delivering new and innovative programs. St. Joseph's Hospital has undergone many renovations, but one item that has endured is a Baker's deck brick oven, originally purchased in 1948. The oven is still functional and is used daily to prepare fresh baked items for our clients, visitors and staff. Danny Koldt, a baker at St. Joseph's Hospital, has been using this oven for 32 years.
Danny Klodt
Danny describes himself as being "lucky that things just fell into place for me." Danny was 19, and fresh out of high school when he started working at St. Josephs' Hospital in 1983. He started as a pot washer before being asked to take a shift as cook. Danny took it on and excelled. A short time later, he was asked to take a bake shift - and that's where he found his true career calling. Despite having completed the Canadian Society of Nutrition Management course making him eligible for a supervisor's position, his passion for baking was much stronger. Word quickly spread about the enthusiastic new baker and the delicious baked goods he was creating at St. Joseph's Hospital.
Danny's passion for baking is still evident today. He is well known for his fabulous recipes including Cinnamon Twist, Carrot Cake and Raspberry Loaf, just to name a few.

Chef Michael Smith, one of Canada's best-known chefs, is a passionate advocate for simple, sustainable home cooking and an inspiration for families creating their own healthy food lifestyle. He's the host of Chef Michael's Kitchen, Chef Abroad and Chef at Home seen on Food Network Canada, Global and in more than 100 other countries. He's a judge on Chopped Canada and traveled the world for his innovative new web series Lentil Hunter.
Michael is the national sustainability advocate for Sodexo Canada and works with the company on a variety of special projects across the country.
